Apricot Jasmine

Summertime!  I want to taste summer in everything.
Plus, dishes should be quick to fix, and equally yummy hot or cold. Am I right?

This fits the bill:  toasted jasmine rice with apricots.
Serves 4-5
  • 1 clove garlic
  • 1 cup jasmine rice
  • pinch of sea salt, optional
  • 1-1/3 cup water
  • 2 apricots
  • 1/4 cup fresh cilantro
Apricot Jasmine
Mince a clove of garlic and brown in a saucepan.
Add one cup of jasmine rice.
Toast rice until it begins to sweat (like 90 seconds). Stir rice with garlic so it toasts evenly.
Sprinkle with your favourite sea salt.
Add 1-1/3 cup of water and stir.
Add two chopped apricots and 1/4 cup chopped cilantro. Stir.
Boil, then cover pan and simmer 15 minutes, until rice is done.
