For simple summertime entertaining, nothing beats Blueberry Bow-Tie Pasta.
Full of summers bounty, we created this bow-tie pasta dish for our Grandpa, who loves lemon.
Blueberry Bow-Tie Pasta is good served warm or cold. Grandpa prefers a hot pasta dish, but the hearty portability of this dish makes it a standout for picnics and summer evening pot-lucks.
 
6 large leaves of basil should be enough, but don't chop the basil too small. Go for an even mix of blueberry, basil, and tomato, so keep these to similar sized pieces. You might want to use 2 tomatoes if they are smallish.

  • zest of 1 lemon
  • juice of 1/2 lemon
  • 1/8 cup minced red onion
  • 1/2 cup shredded Romano cheese
  • 1 cup blueberries
  • 1/3 cup chopped fresh basil
  • 1 large tomato diced
  • 1 lb cooked farfalle pasta
  • olive oil
  • salt -n- pepper

Combine first 7 ingredients with fresh cooked pasta and a drizzle of olive oil.
Salt and pepper to taste.
